Jujube Flower Cake

Soak the dried dates in advance, wash them, and peel them off when they are wet, and remove the date cores. Put it in a steamer and steam for 15 minutes on high heat.

Put the steamed red dates into the cooking machine, add an appropriate amount of water, and make a jujube slurry (the amount of water added is adjusted according to the actual situation, the more water is added, the longer the subsequent frying time).

Put the beaten jujube slurry into a pot, add fine sugar, and stir fry over a medium-low heat. In the process of stir-frying, add vegetable oil three times, and continue to stir-fry so that the oil is completely absorbed by the jujube puree. Stir-fry until the water has almost evaporated and become sticky.

Then make water and oily skin: Mix flour, sugar, egg liquid, lard, and water.

Depending on the water absorption of the flour, the amount of water needs to be adjusted, and it must be kneaded into a smooth and soft dough.

Divide the dough into 19 equal portions, each 18 grams. If the amount according to the original formula should be 24 servings, I think it is too small.

Knead the equal parts of the dough into small balls, cover it with a clean damp cloth or plastic wrap, and let it rest for half an hour.

Then make the shortbread: Mix the lard and flour and knead until it forms a dough. Divide equally into 19 parts. Take a piece of standing water and oil skin dough, flatten it into a round shape, and place the pastry dough in the center of the water and oil skin.

After wrapping up, close the mouth down.

Roll out the wrapped dough with a rolling pin into an oval shape.

After rolling the oval dough from top to bottom, rotate it 90 degrees.

Roll it out again, it will be longer than the first time, and then roll it up again from top to bottom.

As shown in the picture, roll all the 19 pieces of dough and let it rest for 15 minutes. It is still necessary to cover with a damp cloth or plastic wrap, otherwise the dough will dry.

Roll out the leftover dough into a round shape with a thinner circle around it and a little thicker in the middle, and add jujube paste, about 20 grams.

After wrapping, close it with the mouth down and roll it out gently, taking care not to break it.

Use scissors as shown in the picture to cut 12 knives to make 12 petals.
