Jujube Mashed Walnut Candy
1.
Put sugar, maltose, and 100g of water in the pot, start to boil the sugar on medium heat
2.
Boil on medium heat, stir evenly without stopping, boil 130 degrees
3.
Stir the starch and 75g water evenly, while stirring it, slowly pour it into the sugar pot and boil, then add the milk and butter, continue to stir and boil, then add the jujube puree and cook until thick
4.
Finally, put the walnuts slightly roasted in the oven, stir evenly in the pan, put them in a container lined with greased paper, and then cover with a layer of greased paper to flatten and set the shape.
5.
After letting cool, remove and cut into pieces. You can also buy some sugar paper and glutinous rice paper to wrap it in a jar or give someone an absolutely tall gift (⊙o⊙).
Tips:
1. The method of jujube paste is in my other posts. It is an easier way. You can refer to it. Jujube paste should not be too wet.
2. Remember to pour the starch water slowly while stirring, otherwise it will be easy to agglomerate
3. Don't worry if you want to keep turning on the medium heat, it will be done in about 20 minutes.
4. Don't worry about setting the shape, it will take a few hours
5. Don't reduce starch, it is the key to molding.
