Kitty Rose French Macaron
1.
Sift the almond flour and powdered sugar
2.
Sieved and set aside
3.
Put 50 grams of sugar in the egg white
4.
When the egg white hits the small hook, add two drops of red pigment and beat it into a straight tip
5.
Add the almond flour in three times, cut and mix evenly
6.
Put in a piping bag, medium round flower mouth
7.
Because it has the shape of a Kitty cat, there is no need to prepare for printing in advance. It is easier to squeeze out the shape of Kitty directly, and puncture the place with air bubbles with a toothpick.
8.
After squeezing it, start to dry the skin. You can use room temperature cold skin or oven cold skin. I used the oven for about 20 minutes, and it doesn’t stick if you touch it with your hands.
9.
Directly in the oven, without taking out the temperature to adjust to 150 degrees, bake for 16 minutes.
10.
Take appropriate amount of meringue and adjust it to pink and black, ready to draw Kitty cat’s eyes and mouth, and make petals sticky
11.
Use food coloring to draw Kitty's eyes and beard, and then use meringue to draw a bow-like shape to prepare the petals
12.
Just sprinkle broken petals on the bow, then use meringue to draw the eyes and mouth and it's OK
13.
White chocolate, heated in water
14.
Then take 30 grams of flower paste and press to filter the flower juice into 40 grams of whipped cream, so that the whipped cream has a faint smell of flowers and then whip the whipped cream. Don't discard the flower paste, put it in the macarons for a while.
15.
The melted white chocolate, put it at room temperature and set aside.
16.
Then add the cold chocolate to the whipped cream and evenly put it in a piping bag and refrigerate it for half an hour.
17.
Squeeze the chocolate sauce and put a little flower in the middle, and cover the other half of the cake.
18.

Tips:
The egg whites must be beaten into upright tips. The powdered sugar is pure powdered sugar that I crushed by myself with a wall breaker. If I buy it, there should be no corn starch in it. Regarding the frosting: I used the leftover from the last time, so I didn’t write the steps. 250 grams of powdered sugar, 40 grams of water, and 10 grams of protein powder can be mixed and whipped into the state you want.
