Kumbu Chicken and Squid Pot

Dried squid is soaked in alkaline water.

Remove the soaked dried squid from the film and use a cross knife.

Cut the squid head and whiskers into sections.
4.
Chop the stupid chicken and wash it.
5.
The kombu is soaked in warm water to soften it.

Cut the soaked kelp into sections.

Put the stupid chicken in a casserole and boil it with an appropriate amount of water.

Skim the foam.

Add the scallions and ginger.
10.
Turn the lid to low heat and simmer for 1 hour.

Then add the kelp section.
12.
Add dried squid, cover and simmer for 30 minutes.
13.
Finally add fish balls and a pinch of salt.
14.
Cover and simmer for 10 minutes and turn off the heat.
Tips:
Dried squid soaked in alkaline water must be washed several times.
The mucus on the surface of the kelp must be washed off.
Don't add salt too early.
