Large Row of Noodles

After washing the large row, use the back of a knife to pat loose on both sides.

Then use the rolling pin to continue shooting on both sides, and the photograph is twice the size of the original row.

Put the very fresh soy sauce, cooking wine, and salt into the large row and marinate for about 30 minutes.

Chop the sauerkraut.

Stir-fry the chopped sauerkraut.

Put 30 grams of sweet potato starch into the marinated large row, stir well, and continue to marinate for 20 minutes. You can grab and mix a few large rows in the middle, so that the large row will be more tender.

Heat the pot, put in a proper amount of oil, and fry the marinated large amount into the oil pot to fry and shape.

Fry until the surface is slightly yellow, and then remove. This process takes about 1 minute. Remember to medium heat and not too much heat.

Fry the tofu slices in a frying pan until slightly yellow and remove.

Pour out the oil in the pot, leave some base oil, put the shallots, ginger, star anise and cinnamon into the pot, stir-fry on low heat until the aroma comes out.

Put an appropriate amount of water to a boil. Put in a small piece of rock sugar.

Put the large ribs and tofu into the pot, because I want to make noodle soup and like more marinade. Therefore, more water was released, which caused a lot of flooding. If you just want to braise a large row, you don't need to put so much water. Taste the saltiness again to see if you need to add salt and soy sauce. It can be easily inserted with chopsticks to reach a large row from medium heat. This process took me about 20 minutes.

In another pot, boil a pot of boiling water. Add some salt, put the noodles in, and cook.

Put an appropriate amount of broth in the bowl.

Scoop the noodles into a bowl. Put the greens into the bowl.

Take a spoonful of large row of soup, pour it into a bowl, put some fried peanuts, a bit of sauerkraut, put a few pieces of tofu, a large row, sprinkle with the right amount of green onion, and a bowl of fragrant large row of noodles.
Tips:
I think the big row will be more tender if it is wrapped in sweet potato starch. If there is no sweet potato starch, other starches can be used, but the starch should be evenly patted on each of the large rows, and the frying time should be shortened. The tofu in the recipe can be replaced with quail eggs, eggs, dried tofu and so on. There are no limitations, as you like. In the recipe, there are four large portions of noodles. You can increase or decrease the amount according to your needs.
