First of all, use the ingredients to mix the dough out. High-gluten flour + water + yeast + caster sugar + salt, kneading dough for 18 minutes. The butter is added in the last 5 minutes of mixing. After the dough is mixed, let it stand and ferment three times the size to complete a round.

Take out the fermented dough to exhaust. I turned out the "unsophisticated" old mold, 1, 2, 3, um, there is actually a large one.

Divide the dough into three smaller portions and one larger portion. Because I didn't know what to do, I also put butter on the walls of the mold for fear of difficulty in demolding. Later, it turned out that I wanted too much, and the old mold was still very good. Spread the bean paste filling on the dough, roll it up and put it in a mold.

Similarly, after shaping, the dough must be allowed to stand for a second fermentation. Some ovens have a fermentation function. I prefer natural fermentation when the room temperature is high in summer.

It is obvious that the dough has risen. Second serve is still very important. The egg white is left, the egg yolk can brush the bread

Preheat the oven and fire up and down 180 degrees for 30 minutes. Bake the buns. The baking data of this oven depends on the power of each oven to adjust.

I borrowed the little yellow guy from my brother Xin as a model. I used two drops of blue food coloring, added the egg whites and beat them, put them in a piping bag, and matched with melted chocolate liquid. Well, the clumsy painting technique barely finished the production.
