Lotus Leaf Glutinous Rice Chicken

Soak glutinous rice and mushrooms in water overnight. Drain the water the next day. Shred the mushrooms and set aside. Pour some light soy sauce (colored and flavorful) in the drained glutinous rice. Bone and shred the chicken legs, add cooking wine, light soy sauce, sugar, salt, chicken essence, and black pepper to marinate for half an hour.

Soak dried lotus leaves in warm water.

Stir the above ingredients together, wrap them in lotus leaves (similar to rice dumplings) and steam them on high heat for 30 minutes.

The lotus leaf glutinous rice chicken is complete, sprinkle some chives when you eat it.
