Lotus Seed Red Date Pound Cake
1.
Put the butter in a basin after softening, and beat it evenly with a manual whisk;
2.
Add brown sugar;
3.
Continue to beat evenly in one direction;
4.
Add the egg liquid in 3-4 times, beating each time until it is completely absorbed before adding the next time;
5.
After whipping, it should be a fluffy and light creamy paste;
6.
Then add the red lotus paste and mix well;
7.
Sift the low flour and baking powder into the butter paste mixed above, and use a rubber spatula to mix into a uniform batter;
8.
Then soak the dried red dates in advance to soften, then cut into small cubes, add to the batter, and mix well;
9.
Put the mixed batter into the mold, about eighth full, and gently smooth the surface with a spatula; (if it is not a non-stick mold, you need to apply a layer of softened butter in the mold in advance.)
10.
Preheat the oven to 180 degrees, put the grill on the middle of the oven, and bake for about 25 minutes;
11.
The taste is soft and the perfect snack for the family.
Tips:
1. The lotus paste filling can be replaced with jujube paste filling, I use the ready-made lotus paste filling;
2. There is no brown sugar, but white sugar is fine.
