Low-fat Version of Cornmeal and Adzuki Bean Dorayaki

Add water to the cornmeal and stir into granules.

Add flour, baking powder 1g, yeast 3g, sugar 3g. (If you like to eat sweet, you can put more sugar)

Add milk or water and stir to form a thick paste. Put it in the refrigerator to ferment overnight. (Or fermentation at room temperature for one hour)

Prepare the bean paste filling: Press the red beans in a pressure cooker for 40 minutes, then release the steam to open the lid, add appropriate amount of sugar according to personal taste, activate the opening and juice collection function for 8 minutes, take it out and put it in the cooking machine to break it. It is lower in sugar and calories than the ready-made bean paste, but the texture and taste are definitely not that good.

Leave it in the refrigerator overnight and stir to create bubbles.

Preheat the electric baking pan, brush a layer of thin oil, activate the pancake function, and use a small spoon to drip the paste on it.

After one side is golden, turn the other side over and cook it out.

Spread the red bean paste evenly on a slice of tortilla, then use another tortilla to buckle on top, with the lighter side inside. It's edible. You can eat tortillas without making red bean paste, low-fat and healthy whole grains, which taste good too. If you like to eat sugar, you can put more.
