Madeleine Cake
1.
First prepare lemon zest. Wipe the cleaned lemon with a wire grater to remove fine crumbs. Be careful not to rub the white part of the lemon peel (it will be bitter), just the yellow part of the skin. About half a lemon zest is enough.
2.
Mix the rubbed lemon zest with the caster sugar and stir well.
3.
In a large bowl, add egg liquid, caster sugar (and lemon zest), and vanilla extract, stir well (no vanilla extract can be omitted).
4.
On the other side, mix baking powder and low-gluten flour together. ☆Baking powder is a necessary ingredient to make Madeleine swell up, so you can't omit it.
5.
After mixing the baking powder and flour, sift through a sieve and add to the egg mixture.
6.
Stir it with a manual whisk (or spatula) directly to form a thick batter.
7.
On the other hand, cut the butter into small pieces.
8.
Heat in water (or use a microwave oven) to melt the butter completely into a liquid state.
9.
Add the melted butter to the previously made batter and mix well, and the Madeleine batter is ready. If you are skilled enough, the entire production process can be done in 5 minutes. ☆If you have enough time, put the finished batter in the refrigerator for 30 minutes. The batter will become thicker and easier to fill into the mold. If you are in a hurry, you can proceed directly to the next step.
10.
First brush a thin layer of butter in the mold to prevent sticking.
11.
With the help of a piping bag, it can help us to better fill the batter into the mold (how to pour the batter into the piping bag more conveniently? Put the piping bag on a wide-mouth cup, and then pour the batter into the piping bag. Up).
12.
Squeeze the batter into the Madeleine mold.
13.
Put it in a preheated oven at 190℃, the middle layer, bake for 13-15 minutes, until the Madeleine cake is fully swollen and turns golden brown before it is out of the oven (During the baking process, the Madeleine will bulge A tall belly, this is a sign of Madeleine's success).
14.
It's out!
15.
Sprinkle with powdered sugar and enjoy. It is even better with a cup of black tea or black coffee!
