Mapo Tofu

Dice the tofu

Minced green onion, ginger and garlic

Prepare sesame peppers and dried peppers

Bring water to a boil in a pot, add salt, put the tofu cubes in boiling water and blanch for 2 minutes, remove and drain the water for later use

Add vegetable oil to the pot, add pickled peppers and stir fry

Add sesame peppers and dried peppers and stir-fry to get the red oil

Pour in chopped green onion, ginger and garlic until fragrant

Add minced meat and stir fry until the color changes

Add cooking wine, sugar and soy sauce and stir fry evenly
