Mapo tofu is one of the traditional dishes of the Han people in Sichuan Province, belonging to Sichuan cuisine. The main raw material is tofu. Mochi comes from Sichuan pepper, and spicy comes from hot pepper. This dish highlights the "spicy" characteristic of Sichuan cuisine.

Mapo Tofu

1. Cut the soft tofu into small cubes, blanch them in water and remove them. Cut the green onion into small pieces diagonally, mince the ginger, and slice the garlic (you must buy soft tofu to taste, and it must be blanched in water)

2. Put the green onion, ginger and garlic into the boiling oil and sauté, and the amount of oil should be slightly larger

3. Add Pixian bean paste and stir fry for a few times to get the flavor of bean paste

4. Add tofu, add a small amount of salt, pepper, pepper powder, and a small amount of water, stir evenly, and simmer for about 5 minutes

5. When it comes out of the pan, add a small amount of sugar and chicken essence, stir-fry evenly, and it will come out of the pan

6. The mapo tofu is ready to be delicious, let’s try it~

Tips:

1. Buy soft tofu, and the tofu must be blanched in water
2. The amount of oil is slightly larger
3. Less salt and sugar
