Marinated Lotus Root Slices

Pick lotus roots with a lighter surface color, peel the lotus roots, and clean them;

Cut the lotus root and soak it in clean water for a while to prevent the lotus root from discoloring;

Prepare homemade brine; this step can be done in advance: After the brine is cooled, put it in a food bag, and then store it in the freezer compartment of the refrigerator; this is the frozen homemade brine;

Put the brine into a deeper boiling pot;

Boil the brine in the pot on the fire until it melts;

After the brine has melted, put in the lotus root and boil on high heat;

After the lotus root is cooked, turn off the heat and simmer for 30 minutes;
