Mashed Potatoes

Potatoes are cooked in a pot under cold water. I boiled them for 30 minutes. They can be easily pierced through with chopsticks. (Boiled with the skin can prevent the potatoes from absorbing too much water when they are cooked).

Use a spoon to press into a fine mashed potato.

Pour the mashed potatoes into a non-stick pan, add enough ice-cold butter (cut into small cubes) just taken out of the refrigerator, and heat it over low heat. The butter used in this step must be cold, so that the butter melts slowly and can be mixed with the mashed potatoes more evenly.

At the same time, bring the milk to a boil in a small pot.

While stirring constantly with a spatula, heat on low heat until the butter is completely absorbed.

Pour the boiled milk and continue to stir.

After the milk is completely absorbed, add sea salt and stir well.

Grind in a little white pepper and mix well.

Finally, add a little chopped green onion to make the delicious mashed potatoes.

Use a spoon to dig a small ball into a small dish and enjoy it slowly. If you don't eat it right away, brush a thin layer of melted butter on the surface to prevent the mashed potatoes from drying out.
Tips:
The butter must be very ice and hard so that it can melt slowly and be absorbed into the mashed potatoes.
