Matcha Honey Bean Toast

Prepare ingredients.

Put water, egg whites, high powder, sugar, salt and yeast in the bucket of the bread machine.

Activate the kneading program of Baicui PE9600WT bread machine, start kneading, adjust a program to 30 minutes

After the program is over, add the butter cut into small cubes.

Start the iMiX program for another 20 minutes.

Observe the dough, and the process can be stopped when a large piece of unbreakable film can be pulled out. (I hold the camera in my hand and the sticky dough in my hand. It’s a bit difficult)

Divide the dough into two equal parts.

Add 5 g of matcha powder to one portion and press slightly.

Put the dough in the bread machine and knead it for 3-5 minutes with the iMiX program until the dough is even.

Separate the two-color dough with plastic wrap and leave it in a bread machine to ferment.

Take the white dough and vent it loosely and roll it into a strip the same width as the bread machine.

The matcha dough is also rolled out to the same size. Put the two colored doughs together, with the white dough on the bottom and the matcha dough on top.

Spread the honey red beans evenly on one layer, leaving space around them.

Roll up one end of the dough from bottom to top.

Take out the mixing blade of the bread machine, put the rolled dough into the bread machine, and start the second pass. We can use the fermentation function of the bread machine. (Because I am not sure when I can go home, I use natural fermentation. The room temperature in my house is 18 degrees)

Select program 26 baking mode, timing 40 minutes

1 I am using a PE9600WT bread machine, please pay attention to proper adjustments when using other bread machines
2I use Isuzu matcha powder. Each matcha powder has a different taste and color. Please use it in moderation.
3 Due to personal reasons, I was in a hurry to go out, so that the first serve was not in place, which caused my bread to be not so close to the ideal height. However, the tissue is already very soft and the taste is good.
4 The amount of protein can be reduced to 40 grams, increasing the amount of water. The overall temperature of this dough is relatively warm, so you need to use hand powder for shaping.
