Matcha Sandwich Chiffon Cake

Mix it with the matcha paste twice, pour it into the mold, shake it twice to bake

Put it in the preheated oven, heat up and down at 165 degrees in the middle layer, and bake for 50 minutes

After the oven is out, shake it and buckle immediately, let it cool, and demould it with bare hands so that there is no cake crumbs

Now make matcha sandwich sauce: milk 25g + matcha 5-10g, evenly adjusted, no matcha particles

75g milk+50g whipped cream+40g sugar, pour into the milk pot and boil on the stove

After boiling, change to low heat, add the matcha paste that has been adjusted, and continue to simmer on low heat. Because there is a lot of liquid, it will become thicker only if you boil slowly. Be patient.

After ten minutes, the state of the sauce is fine, and the color is a bit brown after being boiled, which is normal

Then use a spatula to poke the layers inside, turn around, don’t puncture the chiffon embryo, use a piping bag to squeeze the matcha sauce into the cake, and then squeeze the cream to decorate some fruits.
Tips:
1. Matcha is easy to oxidize in the air, and the color will not look good when oxidized, so eat it as soon as possible
2. The egg whites are sent at a medium speed at the beginning, and when there are fish-eye bubbles, change to a low speed. Add the fine sugar in three times. Be sure to send them until they are small and sharp.
3. I use a PE5389 oven, please adjust the baking temperature appropriately when you use other brands of ovens
