Mei Cai Bitter Gourd

Wash two bitter gourds and set aside.

After the cut, remove the flesh.
3.
Cut into thin slices with a diagonal knife and soak in salt water.
4.
A small handful of dried plums, soaked in warm water.
5.
Shred a small piece of green onion, and slice two or three garlic cloves.
6.
Wash the plum vegetables and remove the bitter gourd to drain.
7.
Heat oil in a pan, add green onion and garlic and saute.
8.
Add bitter gourd and stir fry.
9.
Add the dried plums and stir fry and season them out.
Tips:
1. Cut the bitter gourd into thin slices
2. Soaking in salt water can reduce the bitterness
3. Bitter gourd must be kept emerald green out of the pot
4. Meicai must be cleaned repeatedly to remove the sand
