Mianyang People’s Favorite Breakfast Rice Noodles 芊子-----jerky Beef and Bamboo Shoots 芊子

Soak the dried bamboo shoots in clean water for one day, changing the water several times during the period.

Wash the beef.

Cut beef and bamboo shoots into small cubes.

Prepare ginger, green onions, and minced garlic.

Put oil in the pan, heat it over medium heat, pour beef cubes and stir fry. There will be a lot of bubbles at the beginning, and the moisture will disappear after frying. The beef needs to be fried with more oil. Add rock sugar, pepper, star anise, Bay leaf, cinnamon bark, grass fruit and cumin.

After the beef is fried in steam, add the bean paste.

Continue to stir fry, pour in the dried bamboo shoots, add light soy sauce, dark soy sauce, cooking wine, and finally add pepper and five-spice powder.

Pour in hot water and simmer for about 30 minutes.

After cooking the noodles, pour in the dried beef and bamboo shoots. You can add chili oil, chicken essence, salt and shallots according to your taste to make it taste better.
