Donkey roll is an old Beijing snack. I used to make it in a steamer. Today I tried it in a microwave oven. I didn’t expect it to be really good. It’s fast and easy. The key is to eat the same as the steamer. The summer is so happy, you don’t have to sweat in the hot kitchen anymore, so happy!
Yellow rice noodles are used for authentic donkey rolls. I'm still going to play the yellow rice noodles I brought back from Yu County! To say that this noodle is absolutely delicious, I used to buy yellow rice noodles online. They were all adulterated and not sticky at all. The yellow rice noodles I brought back from Yuxian County were slimy, really delicious!

Microwave Version of Donkey Roll

1. First, weigh 200 grams of yellow rice noodles in a large bowl that can be used in a microwave oven

2. Then slowly add 200 grams of water and mix well with chopsticks

3. After reconciliation, it looks like the picture

4. Cover the lid and heat in the microwave on high heat for 2 minutes

5. Put on gloves, take out the bowl, stir a few times with chopsticks, then put it back and continue to microwave for 2 minutes

6. Take it out and stir for a few times and then pour it on a chopping board that has been sprinkled with cooked soybean noodles.

7. Sprinkle some cooked soybean noodles on the dough and use a rolling pin to roll into large noodles

8. Spread the homemade red bean paste evenly on the dough

9. Then roll up

10. Dip the knife in water and cut into sections, put it on the plate and start eating!

Tips:

My microwave oven is 900 watts, and each person needs to increase or decrease the heating time according to the power of his own microwave oven.
The soy noodles I use are fried soy noodles that I bought. If you don't have one, use raw soy noodles and microwave them until the color is slightly yellow.
The knife is dipped in water to prevent the dough from sticking to the knife
