Milky White Winter Melon and Shrimp Skin Soup

Peel and remove winter melon, cut into thicker slices, about 4 to 5 mm

Wash and remove the stalks of fresh shiitake mushrooms and use a cutting knife. The cut corners can be put into the pot later or used in other dishes. Just wash the shiitake mushrooms without styling

Wash the shrimp skin with water, dry the water as much as possible with your hands, and set aside. Shred the ginger, chopped green onion, and use separately

Put oil in the pot, stir fragrant ginger and green onion on low heat

Add the shrimp skins and stir-fry until the skins are smelly and the skins are obviously browned. Be careful not to fry them.

Pour enough cold water at one time. I poured 1000ml of water and opened the lid to bring it to a boil. The amount of water is according to your needs, put more and drink more soup

After the water boils, take a look at the soup. Is it white? Add winter melon and shiitake mushrooms

Cover and continue to boil over high heat. Turn the pot to medium and low heat and simmer for about 8 minutes until the winter melon is transparent.

Open the lid to taste, three teaspoons of salt, and half a teaspoon of white pepper. The amount of soup is different, so please taste the amount of salt for yourself

Sprinkle green onion before serving
Tips:
This recipe is about three people. I used the filed shrimp skins, which are basically non-salty. If the shrimp skins you use are salty, please add the amount of salt as appropriate.
