Mini Apple Pie-a Must-have Dessert for Thanksgiving

(Making pie crust) Melt 60g butter in water;

Add sieved 180g low-gluten flour and 35g fine sugar;

Add 1 egg yolk; (no egg whites!)

Add 30g of water;

Knead it into a smooth dough, wrap it in plastic wrap and put it in the refrigerator to relax for more than half an hour;

(Making pie filling) Wash 2 apples, peel, remove the heart, and cut into small cubes for later use;

Add appropriate amount of water to 10g cornstarch and mix well;

Pour 20g of butter into the pot and melt it on a low heat;

Pour in the diced apples, stir-fry for a minute, add 50g of fine sugar and continue to stir-fry; (remember to use low heat to fry!)

Pour the adjusted cornstarch liquid into the pot in a circle and continue to stir fry on low heat;

Squeeze the lemon juice; (you can squeeze into the bowl in advance to prevent the seeds from squeezing into the pot)

Continue to stir fry on low heat, basically turn off the heat when the juice is collected, and let it cool; (remember! Don't dry it too much)

Take out the loose dough in the refrigerator, use a rolling pin to roll it into about 3 mm thick dough pieces, and then divide them into 8 portions according to the size of the mold;

Take a piece of dough, put it into the mold, press gently along the inner edge with your hands, and then use scissors to remove the dough that has been over a month old;

Use a fork or toothpicks to make some holes in the middle, mainly to bulge the bottom during the baking process; at this time, preheat the oven to 200 degrees in advance;

Roll out the excess pie crust and cut it into strips of the same size as the diameter of the mold;

Add the cooled pie filling;

Put the cut strips on the apple filling with the method of weaving a basket, and finish all of them in turn; (as shown in the picture)

Brush the egg liquid evenly;

Put it in the middle of the preheated oven, 200 degrees for about 20 minutes!
