Moss Yellow Croaker

The small yellow croaker is cleaned, the seaweed is roasted and crushed, and the flour, starch, baking powder, onion, ginger slices are prepared.

Marinate the small yellow croaker with salt and pepper powder, cooking wine, onion, ginger slices for a few minutes.

Mix the flour, starch and baking powder, pour in water to make a batter (it can be pulled into a straight line with chopsticks), then pour in the oil until the batter is mixed, and add crushed seaweed.

Put the oil in the net pot and heat it to 40% heat, then put the glutinous yellow croaker into the pot and soak in a low fire for about 30 seconds until the outer layer turns light yellow and crusts. Remove the oil control, raise the temperature of the oil to 60% hot, and fry the fish strips for 10 seconds until the color darkens and the dark green of the moss strips are revealed. Remove the oil control.

Tips:
When marinating fish, put less salt, and sprinkle salt and pepper when the fish is fried.
Stir gently when making the batter. It is not necessary to stir in the same direction for a long time, otherwise it will not be easy to shape during frying, which will affect the taste.
