March is the season to eat wild vegetables, and Ai Ye is one of my favorite wild vegetables. Mugwort pancakes are one of the breakfasts I must eat every spring.

Mugwort Pancakes

1. Prepare wormwood, flour, ginger, peanut oil and other ingredients; choose fresh and tender wormwood, and old leaves can be dried for use.

2. Boil clean water, add the washed mugwort leaf to blanch;

3. Remove and drain the water, put the ginger into a food processor and break it. Wash the ginger and cut it into a small piece, which is easy to break;

4. Melt the white sugar, mix well with flour, mugwort and ginger;

5. Knead into a smooth dough;

6. Divide into small rounds, the size can be according to your preference;

7. Use a rolling pin to roll out the small balls;

8. Pour the oil in a hot pan, add the small round cakes and fry until golden brown;

9. Flip the other side and continue to fry until golden. PS: You can turn it back and forth several times to make the frying more even

Tips:

1. You have to choose the tender part of Ai Ye to eat; 2. If you like to eat salty, change the white sugar to salt;
