Mushroom Braised Pork Rice

Choose fat and lean pork belly, with skin on it.

Cut the pork belly into small thin strips, keep the skin, cut the purple onion and garlic, cut the shiitake mushrooms into small pieces, slice the ginger, and I forgot to take a picture of the ginger.

Wash the cut pork belly and blanch it in boiling water for 10 minutes, during which time the foam is skimmed off, and the water for blanching the pork is reserved for later use.

The blanched meat is cooled and dried with water, put a small amount of oil in a hot pan, stir-fry the pork belly, stir-fry the lard, and set aside the meat for about five minutes.

This is the oily pork belly, and the meat becomes golden brown.

Saute the diced spring onion and garlic with the simmered lard. When the scented spring onion turns golden brown, stir-fry the meat together in the pot, add the dark soy sauce, light soy sauce, cooking wine, rock sugar, five spice powder, white Stir-fry the pepper and ginger evenly.

Pour it into a casserole and add the water used for blanching the meat. The water should completely cover the meat. You can put more because it takes a long time to marinate, and you will need to put shiitake mushrooms and eggs in the back. Add Chinese pepper aniseed fragrant leaves and a teaspoon of salt. Turn to a low heat and simmer for 40 minutes. The meat will become soft and rotten.

At 20 minutes, add shiitake mushrooms and boiled eggs. Continue to simmer for another 20 minutes. Stir twice in the middle. Be careful not to dry the pan.

This is the cooked shiitake mushroom stewed meat. The juice should not be too dry, it will be delicious when the juice is poured on the rice. I put the pepper aniseed and bay leaves in the strainer. After the meat is marinated, it is convenient to take them out, so as not to taste bad when eating.

Take another two shiitake mushrooms and a few rapeseeds, blanch them and place them on the cooked rice. Cut the marinated eggs and pour a tablespoon of marinated meat with the broth on top. You can eat them.

Tips:
1. Boiled vegetables can be freely matched according to your own preferences.
2. The eggs can be half-cooked in advance. If they are fully cooked, the yolk will be too old if you marinate for 20 minutes later.
