Prepare the ingredients first. Cut the winter melon into thin slices, about 0.3 cm. You can buy crispy roasted meat at traditional vegetable markets, and there are also some roasted meat shops, remember! Ask the boss to cut thin slices~ In addition, the coriander cuts are of any size. The coriander I eat at Yinxiang Xiaodian is finely chopped. But because I love coriander, I cut it about 1 cm.

After heating the pan, add 1 teaspoon of oil, then put the crispy roast pork down and slowly fry the oil over low heat. Yinxiang Xiaoguan should be fried with pork skin until it is crispy. You can also put the pig skin and fry the lard directly.

After the crispy roasted pork is fried until golden brown, add the shrimp and continue to stir-fry for about 10 seconds. Please continue to maintain a low fire.

Then pour the winter melon and stir fry for 10 seconds, then pour in 2 teaspoons of soy sauce and 1/2 teaspoon of oyster sauce, then turn the heat to medium-high heat and continue to stir-fry for about 10 seconds, the purpose is to sauté the soy sauce until fragrant. Finally add 100ml of water, cover the pot and simmer for 3 minutes. If your winter melon is cut into too large slices, it may need to be simmered for 5 minutes. But in fact, how long the winter melon is cooked depends on the taste of winter melon you like.

Put the coriander in the pan, stir and fry for 5 seconds before serving!
Tips:
This time I used the crispy roast pork which is common in Taiwanese roast meat shops instead of fried pork skin, but when I bought it, I forgot to tell the boss that I was going to cut thin slices, because I think thin slices of crispy roast pork would be closer to the texture of fried pork skin. , And my long-striped crispy roast pork...ㄜ...not bad~
