Jiangxi rice noodles are generally dry. Don't think it is like vermicelli. You have to soak in water before cooking. Jiangxi rice noodles are boiled directly in boiling water. First, boil a pot of water and put the rice noodles in. Now supermarkets usually sell rice noodles in one kilogram. You can cook it according to your food intake. Generally, a family of three will cook about one pound.

After the water has boiled, turn to a low heat. At this time, you can use chopsticks to hold the rice noodles. You can feel that the rice noodles are very hard and won't break even if you clamp them forcefully.

After cooking for about 10 minutes, the rice noodles are already very soft. If you find that the water used to cook the rice noodles has thickened, but the rice noodles are still hard and cannot be pinched off, add water and continue cooking. After adding water, you can increase the heat. Turn the heat to a small boil when it's turned on, so that it won't stick to the pot easily.

Generally, the rice noodles are cooked for about 15 minutes. It can be easily clipped with chopsticks, and it is soft when eaten in the mouth, without any hard feeling, which means it is cooked.

Pour the cooked rice noodles into a basket. Be careful to use a basket with tighter holes to prevent the rice noodles from slipping off. Pour out the slurry of boiled rice noodles that leaked out, rinse the rice noodles with water, and wash off the slurry on the rice noodles. Touch the rice noodles with your hands without sticky feeling, but a smoother texture. Just rinse well. Dry the rice noodles for later use.
