Noodles in Chicken Soup

Put the chicken wings and roots in a pot under cold water, add salt, pepper, star anise, green onions, ginger, and garlic to a boil over high heat, scoop out the froth and cook on medium-low heat for about half an hour.

For the noodle machine, choose the noodle press to install, and add flour to it.

Close the upper cover and select the fully automatic program. Mix the egg liquid with water and slowly pour it into the machine from the upper cover.

The noodles will come out automatically.

After the water in the pot is boiled, put the noodles to boil first, and then add the lettuce after two times of water is boiled.

Put the clear chicken soup in a bowl.

Add the noodles and lettuce, and finally cut a cherry tomatoes and put aside some shiitake mushroom sauce on top.
Tips:
1. Put more salt in the chicken broth so that the noodles are just right. The cooked wing roots can be eaten directly, or fried, or made into lo-mei.
2. If you have time, you can boil the chicken soup on a low heat for another half an hour to get a better taste.
