Noodles with Soba Sauce

Prepare fresh soba noodles. Many people have never seen it before, so I took a special photo.

Dice the lean pork meat, I cut it into large pieces, wash and chop the tomatoes, mix the yellow sauce and sweet noodle sauce in a ratio of 2:1, and set aside. Change the onion, ginger, and garlic with a knife; heat the pan with warm oil, add the diced meat and stir fry until the color changes

Then add green onion, ginger, garlic and fry until fragrant, then add a little rice wine and fry until fragrant to remove the smell, and then add the well-mixed sauce and stir fry

Then put the tomatoes in a stir-fry a few times, add an appropriate amount of boiling water, and continue to boil for ten minutes after boiling. This is not a traditional fried sauce, nor is it a traditional braised sauce, I combined the two. This way it has a strong sauce flavor and the noodles will not be dry (because I use lean pork meat and use less oil, which makes it healthier to eat)

Cook the soba noodles, add the greens and cook them before they come out of the pot, save trouble, and then take them out together and put the juice in a bowl, stack the sliced cucumbers on top, mix well and eat.
