North African Eggs

Cut onions and mushrooms into cubes, and cut green peppers, red peppers, dried tofu, and tomatoes into small cubes. Chop pepper and slice garlic;

Heat the pan, add olive oil, pour the chopped onion and green and red pepper into the pan and stir fry;

Add garlic, chili, and dried tofu in a pot and stir-fry until the ingredients are slightly soft;

Put tomatoes and mushrooms in the pot and continue to stir fry;

Then add cumin seeds (cumin), salt, and pepper to taste until the ingredients in the pot become soft.

Dig out four circles as shown in the picture to beat the eggs; (If you only put two eggs, you only need two pits, how come I like to talk nonsense)

Break the eggs into the circle. Cover the pot, turn on a low heat, and fry the eggs for 5 minutes;

5 minutes later.

Chop the shallots and coriander, and sprinkle in the pot before serving.

Put it on the pot directly on the table, not the beautiful ones.

It's really delicious, my family makes breakfast often. The egg has no flow, but it is not fully cooked. It is very good.
Tips:
If it’s breakfast, you can cut the vegetables the night before and put them in the refrigerator, which saves time the next day.
