North African Eggs

Cut green and red peppers, onions, and tomatoes (peeled) into small cubes.

Cut chives and coriander into small pieces.

After sautéing for a while, add garlic and sauté until the ingredients are soft, add diced tomatoes and sauté.

Season with salt and black pepper powder, and fry until the ingredients become soft and rotten. (At this time, I replaced it with a small cast iron pot) Then dig a circle in the middle and break in an egg.

Cover the pan and fry on low heat for 5 minutes. Sprinkle with chives and chopped coriander before serving while hot.
