The pig’s tongue is cleaned one by one.

Add cold water to the pot, add ginger slices and cooking wine to blanch water, boil for about 3 minutes after the water boils.

Remove the tongue of the pig while it is hot, scrape off the white fur with a knife, and rinse it off with warm water.

Add cold water to another pot, cooking wine, light soy sauce, dark soy sauce, star anise, pepper, dried red pepper, and bay leaves. Bring to a boil and put in the pig tongue. Bring to a boil again and simmer for 40 minutes on low heat.

Take out the pork tongue and cut it in half, then cut into small slices and put it in a large bowl.

Add minced garlic, coriander, light soy sauce, vinegar, sugar, salt, chicken essence, chili oil, and sesame oil and stir well.

Tips:
