Nutritional Hair Cake

Cornmeal, white flour, 200g milk, 400ml liqueur (I use self-brewed mulberry wine), 50g starter, 100g baking soda, 5g

Melt the starter with milk and sweet wine, pour in the baking soda, then pour in the cornmeal and white flour, stir well, and let stand for half an hour to ferment. In the meantime, wash the red dates, raisins and goji berries, put the red dates in a bowl, put half a bowl of water, beat them in the microwave for 2 minutes, let cool and take the cores for later use.

Stir in the cleaned noodles, put a pot of cold water on the cloth, spread the red dates on the surface, and turn on the heat after ten minutes.

After the water is boiled and steamed for 20 minutes, turn off the heat.

Let cool and cut into pieces. I made two baskets at once, enough for a few days.

Tips:
1. The ratio of corn flour to white flour and the type and amount of dried fruits may be adjusted according to your own taste;
2. The noodles should not be too thin, and a certain degree of toughness can be felt when stirring, so that the cake can be easily formed;
3. Don't be eager to cut into pieces and change the knife. You learned how to cut hair cake with thin lines when you were a child;
4. The temperature is 30 degrees that day, the weather is hot, and the amount of starter is also larger, it takes about an hour to make it. The fermentation time will vary depending on the temperature, just look at the noodles being twice as long as the original.
