Tips:
Windy sunny day:
1. Coarse cornmeal steamed buns are different from the perfect white steamed buns and black sesame steamed buns introduced earlier. They use the two-fermentation method, which means that the dough is reconciled and fermented first, then vented to shape, and then after the second fermentation. Steaming method;
2. Adding a small amount of sugar to flour is to improve the activity of yeast and make fermentation faster, if not put;
3. The standard for kneading the dough is "three lights", that is, dough light, hand light, and pot light;
4. The divided dough should be as uniform in size as possible, if the size is different, it will affect the steaming effect;
5. The fermentation process will be affected by the indoor temperature and the size of the dough, so the fermentation time is for reference only, and it is better to visually increase the appearance by at least 1.5 times;
6. Steaming should start with cold water, medium to high heat, when the water in the pot is boiling, there is steam coming out of the pot, it takes about 15 minutes to start timing, depending on the size and number of steamed buns to increase or decrease the time appropriately;
7. After steaming, turn off the heat, but do not open the lid immediately. Wait 3-5 minutes before opening the lid, otherwise the skin of the steamed buns will become crumpled due to sudden temperature changes. After the steamed buns, lightly press the outer skin with your hands to have elasticity.
