Oil-free Sweet and Sour Pork Ribs

820 grams of spare ribs, wash and remove the bone residue;

Boil the ribs in a pot of warm water, remove the ribs with a colander;

In another pot, pour hot water, put the ribs into the pot, add the green onion, sliced ginger, star anise, pepper, and amomum. When the water is boiled, turn to a low heat and simmer slowly;

About 40 minutes later, the ribs are 9 minutes cooked, take them out and set aside;

Sweet and sour sauce: Take the same spoon as an example, 1 and a half spoons of sugar, 1/3 spoon of salt, 5 spoons of soy sauce (adjust the amount according to the color of the soy sauce), 2 spoons of rice vinegar (split twice) and 1 spoon in a bowl In the juice, pour another spoon into the sauce, 10 spoons of cold water.

Take a pot, pour the sweet and sour sauce into the pot, then put the ribs into the pot, mix well with the sweet and sour sauce, boil over medium heat, turn to low heat, cover and simmer for 5 minutes;

When braising the ribs, take half a spoon of starch, add 3 spoons of cold water, and mix well;

When the soup in the pot is reduced, pour a little vinegar along the side of the pot;

Pour the starch slurry into the pot;

Collect the juice and leave it out, or sprinkle some white sesame seeds.
Tips:
1. Boil the ribs until they are 9 minutes old, so that they can be cooked in a sweet and sour sauce pot for a few minutes before they are delicious;
2. The vinegar must be put in two places. Although part of the vinegar will evaporate in the first time, it can be eaten into the meat; the second time, just pour a little bit before it is out of the pot, and the sweet and sour taste will be enough;
3. The proportion and dosage of various seasonings can be adjusted according to your own taste.
