Okra Salad
1.
Wash the red okra with salt, and there are some small fluff on the surface. Rubbing with salt can remove the dust very cleanly;

Peel off a head of garlic and clean the chives;

Put the red okra into a pot of boiling water and cook for 1-2 minutes; see, it is still red now; if you like crispy, cook for a while, if you like soft, you can cook for a while;

It turned green in a blink of an eye. Isn’t it interesting? When the okra is cooked to the taste you like, take it out and wash it in too cold water;

Chop garlic and mince chives;

Cut the okra in two longitudinally, and place it on a plate with the cut side up;

Pour a little oil in the wok, put 2/3 minced garlic into the wok, stir-fry on low heat;

At first, the minced garlic will stick to the shovel, but it will turn into golden brown when it is fried, and the pieces will separate. You can turn off the heat here;

Spread the fried golden minced garlic and fresh minced garlic on the top of the okra, and then drizzle some steamed fish soy sauce to eat!
Tips:
1. Okra is divided into size and thickness, so the blanching time is adjusted according to the actual situation;
2. Don't stir-fry the minced garlic over fire. The over-heated minced garlic will have a bitter taste when you eat it. It is enough to separate the minced garlic until it changes color;
3. You can use light soy sauce instead of steamed fish soy sauce.
