Prepare a box (bowl) of rice overnight, and be careful not to use freshly braised rice! ! Cut half a cucumber and a small piece of carrot (I forgot to shoot the carrot) into cubes and set aside.

Break one of the eggs and set aside.

Clarify the water in the canned corn kernels (as shown in the figure, use the lid of the can to hold the corn kernels and pour water) for later use.

Pour a little cooking oil into the pan and heat the pan.

When the oil is hot, add the chopped green onion and diced cucumber and stir fry.

The rice can be put into the pot after frying the aroma.

After the rice is in the pot, add the diced carrots and stir fry.

After all the ingredients and rice are evenly stir-fried, the spicy cabbage can be added. Note that if the spicy cabbage you buy is too bulky, you must cut it into strips with scissors diagonally, so that it tastes delicious.

Stir-fry the spicy cabbage and rice to evenly color.

After the color is uniform, the whole can of corn kernels can be put into the pot. The corn kernels are already cooked, so they won’t taste good if they are fried for too long, so we have to make the last!

After a few simple stir-fry, turn off the heat and add the broken eggs. Note that after turning off the heat, use a spoon to pour on the rice little by little, and use the remaining temperature of the pot to boil the eggs. (I think it tastes better this way, you can omit this step for those who don’t like it!)

After adding the egg droplets, stir fry a few times (the heat has been turned off), so that the egg liquid on the top is in contact with the remaining temperature of the pan.

In this way, the rice is cooked and served elsewhere for later use. (My house has only one induction cooker, so you have to serve it after cooking. If there are two gas stoves in the house, you can just put the rice on the other one and continue the following steps.)

Apply a thin layer of cooking oil in the pan with a brush, and heat the oil on a low heat. (My home uses a frying spoon instead of a frying pan, but the effect of the fried egg crust will definitely be compromised, so try to use a frying pan. In addition, if you don’t have a brush, you can pour the oil into the pan and gently turn the pan to fill the pan with oil. can.)

Pour the broken egg liquid into the pot slowly and evenly, and turn the pot gently to spread the egg liquid evenly on the bottom of the pot.

When the egg liquid is as shown in the picture, shake the pan counterclockwise a few times to see if the egg skin is not sticky and can be shaken. This means that the side facing the bottom of the pan has been fried.

After frying one side, turn it over with a tool such as a spatula. Note that this step is particularly easy to leak or break the egg skin, and the timing should be mastered. PS: Without a pan, this egg crust made me fry this virtue...
