One Dish and Two Dishes are Side Dishes and Snacks-crispy Peas
1.
Soak the dried peas in cold water for two days in advance to soak them completely.
2.
Put the soaked peas in the refrigerator and freeze them completely, preferably for a day. After the frozen peas are thawed, use a dry cloth to absorb the water on the surface.
3.
Add an appropriate amount of oil to the pot to heat 70% to 80%, and pour in the peas.
4.
Fry until the peas float in the oil pan and then fry for 2-3 minutes. The freshly fried peas are not crispy at all and will be very crisp after cooling down.
5.
Sprinkle the peas that have just been picked up from the oil pan with salt and seasoning, and stir well.
Tips:
1. Putting peas into the refrigerator to freeze is a key step for peas to be crispy or not, so be sure to freeze them.
2. The freshly fried peas are not crispy and have to be cooled.
3. Sprinkle salt while it is hot, mainly to let the salt melt away.
4. Seasoning can also be added according to your own habits.
