Original Chicken Soup

Split the local chicken in two, simmer half of it into small pieces, put all the chicken pieces in boiling water, and put a little cooking wine and ginger slices in the water.

Put half of the chicken in cold water, add four shiitake mushrooms, a few slices of ginger, add enough water at a time, bring to a boil on high heat, turn to low heat, and simmer for about two hours. The whole process of simmering can't add water, and the pot is covered. Don't open it.

After two hours, open the stew pot and add salt, and cook for a few minutes. When drinking, add other seasonings according to personal taste. In fact, just sprinkle with coriander without any seasoning will taste great.
