Original Madeleine

Mix lemon zest and caster sugar for 1 hour. I rub it directly with lemon, and try not to mix it with the white part under the skin.

Beat eggs into the bowl.

Mix the lemon zest and sugar mixture with the eggs.

Beat with an electric whisk at low speed.

After beating well, add a little vanilla extract.

Add the melted butter and mix well, preferably in two portions.

Finally, sift in the low-powder and baking powder and mix well.

Put the stirred batter in the refrigerator for 1 hour. After refrigerating for 1 hour, take it out to warm up and stir again.

Brush the mold with oil and powder, put the batter into the piping bag, and squeeze it into the mold. Preheat the oven at 190 degrees for 10 minutes.

Put the mold with the batter in the middle of the oven and bake for about 12 minutes.
Tips:
The amount of this recipe is relatively small, and I basically doubled the material when I made it later.
