Oven Version Waffles

Preparation of raw materials: low-gluten flour, milk, sugar, butter, weighed for later use, separated from egg white and protein

Butter melts in water

Pour the milk into the melted butter

Add the egg yolk to the butter milk mixture and mix well

Add a few drops of vanilla extract and stir well

Sift in low-gluten flour and stir into a uniform batter for later use

Put the egg whites into an oil-free and water-free container, add a few drops of lemon juice, and add sugar in three times

Whip the egg whites to a stiff foaming state

Scoop 1/3 of the egg whites into the egg yolk paste and stir evenly

Pour the egg yolk paste into the remaining egg whites all at once

Stir into a uniform batter

Pour the batter into the mold, put it into the preheated oven at 180℃ and bake for 20 minutes, then let it cool and release the mold
Tips:
1. There are generally two formulas for waffles, one is to add baking powder and the other is to whip the egg whites. All are to allow gas to enter the flour and make the finished product fluffy, which is also the key to distinguishing ordinary pancakes from waffles. Although the method of adding baking powder is simpler and more convenient, the method of whisking the egg whites is healthier and has a better taste;
2. Vanilla extract is used to remove egginess, and can also be replaced with vanilla pods or rum.
