Pan-fried Fathead Fish

Clean up the selected parts.

Cut into 4~5 cm pieces.

Add appropriate amount of salt, light soy sauce, vinegar, sugar, thirteen spices, chicken essence, stir well, and marinate for 15 minutes.

Heat the oil, coat with starch, and fry until golden.

Combine light soy sauce, sugar, vinegar, cooking wine, chicken essence, and oil into a juice, prepare green onions, ginger, garlic, and chili.

Use green onions, ginger, and garlic to sauté the pan, add the fried fish and the just adjusted juice, and stir-fry for about 3 minutes.
Tips:
Note that when frying fish, do not fry the fish, check it often.
