Pan-fried Mushrooms with Spanish Garlic

Wash the fresh mushrooms and carefully dig out the mushroom stems;

Mince garlic and cut dried chili into circles;

Heat a pan on a low heat, add butter to melt;

Add minced garlic and red pepper, stir fry until fragrant;

Add mushrooms (bottom down), sprinkle evenly with fine salt; fry slowly on low fire, if the pan is dry, add some cooking wine;

After frying, you can add some butter instead. Continue to sprinkle a layer of fine salt, and add some cooking wine when the pot is dry. Use a shovel to gently push the mushrooms, the middle mushroom bowl will gradually be filled with the juice from the mushrooms~Be careful not to overturn...Finally, you can add a little sugar to taste, fry through the pan, and sprinkle some black pepper. Tips:
1. The purpose of digging out the mushroom stems is to leave a small bowl-shaped pit for the juice of the mushroom itself when frying;
2. When frying, first fry bottom-down, and then don't turn it back in order to retain the juice in the small bowl.
