Pan-fried Octopus

Remove the viscera and belly of the hairtail, rinse with black running water and cut into sections. The hairtail should be three-finger wide as it is too thick and difficult to fry.

Prepare cooking wine, white sesame seeds, five-spice powder and other spices. Cut two green onions into sections, and slice one ginger.

Put the green onion and ginger into the octopus, add some salt, 2 grams of five-spice powder, about three tablespoons of cooking wine, add a little chicken powder and a little sugar, mix well and marinate for 20 minutes.

Pour a little more oil in the pan, add the hairtail when it is slightly smoked, do not turn it immediately, and fry it over a medium heat.

Fry on one side until golden brown, turn over and fry until golden and hard crust on both sides.

Drain the hairtail or use kitchen paper to absorb the excess oil and sprinkle with white sesame seeds. You can also sprinkle some pepper powder or cumin powder on it. It will be delicious too.
