1. After removing the viscera and gills of the fish, wash it with water and protect it in the basin.

2. Put 1 or a half of rice wine, a pinch of salt, pepper, aniseed, green onion, and ginger slices in the basin. Then squeeze a few drops of lemon juice. Mix well, cover with plastic wrap and marinate in the refrigerator for about 30 minutes.
