Peanut Butter Cookies

After the butter is softened, mix it with powdered sugar and beat with a whisk, until the color is slightly lighter and the volume is puffy; pour the beaten eggs into the beaten butter

Continue to beat with a whisk until the butter and eggs are completely fused and present a puffy and light state; the state of the beaten butter is shown in Figure 4.

Pour peanut butter in the butter and beat with a whisk to mix the peanut butter and butter thoroughly

Pour the flour into the mixed peanut butter and stir gently with a rubber spatula to form a uniform biscuit batter

Pour the batter on the chopping board and knead it into a strip with a diameter of about 2.5cm. As shown in the picture, this is the kneaded strip. Put the strip into the freezer compartment of the refrigerator (the layer of frozen ice) and freeze More than 1.5 hours, until the strip becomes hard

Cut the frozen long strips into small round pieces with a thickness of about 0.8CM with a knife. Arrange the small round pieces on the baking tray, leaving a suitable gap between each small round piece, and then put the baking tray into preheated. 180 degree oven baking
Tips:
1. When rubbing the batter into long strips, if the batter is relatively moist and sticky, you can put the batter in the refrigerator for a while and it will become better. But be careful not to refrigerate for too long, so that the batter becomes too hard;
2. Peanut butter can be bought in general supermarkets. There are granular or smooth peanut butter. Choose according to your preferences. Personally recommend to choose the granular type, with peanuts inside, the biscuits made with better taste;
3. The biscuits will swell to a certain extent when they are baked, so you need to leave some gaps between each biscuits. Don't put them too densely to prevent them from sticking together;
4. I only recently learned that many friends do not know the difference between "refrigeration" and "freezing". Special statement: refrigeration refers to the layer in the refrigerator that is above 0 degrees, which is the yogurt and fresh vegetables in your refrigerator. Frozen refers to the layer of frozen ice, which is the place where ice cream and frozen meat are placed (at least in my blog, the two words refrigeration and freezing are the concept).
