Peanut Sesame Paste
1.
Prepare the required ingredients
2.
Put the raw peanuts in a pan, slowly stir and fry them over a low heat, and fry them until they make a crackling sound and they are fragrant.
3.
Wash the raw black sesame seeds in advance, put them in a sieve to dry the water, then put the raw black sesame seeds in a pan, stir fry on low heat until they make a crackling sound, they will be cooked through, don’t fry for too long. The taste will be bitter after a long time
4.
Mix the fried black sesame seeds with glutinous rice, peel the peanuts and set aside
5.
Put the peeled peanuts into the wall breaking machine, close the lid, start the grinding button, and beat them into fine peanut powder, take it out
6.
Then put the mixed black sesame, glutinous rice and rock sugar into the wall breaker, pour 800ml of boiling water, close the lid, start the grain key whipping 1 or 2 procedures, and make a fine sesame paste, according to the fineness of the sesame paste To adjust the whipping time
7.
Then filter the sesame paste, or leave it unfiltered, the filtered taste will be more delicate and smooth
8.
Put the saucepan filled with sesame paste on the stove, stir while boiling over low heat, and bring to a boil
Tips:
1. The ratio of black sesame to glutinous rice is 2:1. I think this ratio tastes better. If you like the thick sesame paste, you can add less water, otherwise you can add more water.
2. Use low heat when frying peanuts, otherwise it will be easy to fry, and the peanuts will crackle and fry until they are fragrant.
3. Fry the black sesame seeds over a low heat for a while, and the taste will become bitter after a long time.
4. After filtering the sesame paste, the taste will be more delicate, or you can choose not to filter, the taste after filtering will be more delicate and smooth (you should choose a slightly larger sieve, or filter the sesame paste, leaving only some sesame water) .
5. If you are greedy and convenient, you can fry raw black sesame seeds and glutinous rice separately in advance, put them in a sealed bottle and take them as you use them (it is best to eat them in a week, or it will taste easily), and directly beat them with boiling water to make fine The sesame paste does not need to be cooked anymore.
6. Peanuts can be replaced with almonds and walnuts to reflect different flavors.
