Peanut Shortbread

All ingredients are well weighed!
For peanuts, I chose medium-sized peanuts.
It is best to put maltose, if there is no maltose, you can use white sugar instead.
The finished product will be different!

Put the peanuts in the pot, stir-fry them at the lowest heat, keep turning them, so as not to fry them!
Peanuts in an oven are roasted at 150°C and cooked in 15-20 minutes!
If there is no oven, just put it in the pot and stir-fry slowly!

Frying in a pan is not as evenly heated as baking in an oven, so the fire should be low and keep turning to avoid frying.

Peel the peanuts after they are cooked.
After the peanuts are cooked, they can be peeled without being hot. As long as it is cooked, the skin is easily removed.
After peeling the peanuts, divide them into 2 halves from the middle

Put water, white sugar, maltose in a non-stick pan and boil the sugar over low heat.
It is best to boil the sugar in a non-stick pan. In winter, the maltose is not easy to come out, so use boiling water to soften it before taking it out.

After the sugar is boiled, continue to cook on a low heat. It is best not to stir in the middle, you can turn it slightly.
When boiling, there will be some unmelted sugar on the edges, which can be gently moved with a spatula to make the heating more even.

The sugar solution is boiled at 120°C-130°C.
If you don’t have a thermometer, dip it in the sugar liquid and put it in cold water. The sugar liquid can solidify and become hard and brittle. It means that there is a thermometer when the sugar liquid is boiled, and it is more convenient to use a thermometer to check.

After the sugar is boiled, reduce the heat to the lowest, quickly add peanuts, and mix well with a spatula.
Move quickly when mixing, so that each peanut is coated with liquid sugar.

After mixing well, pour it into a container lined with greased paper. Be careful of the action: spread the greased paper ahead of time!
Then use a scraper or rolling pin to assist in shaping into squares!
Note: The speed should be fast, otherwise it will become hard when it cools down, and it will be difficult to organize the shape.

After the peanut candy is shaped, let it cool until it is not hot to touch with your hands, then cut it into pieces!
The crispy candy should be cut eagerly. Once it is completely cooled, the peanut candy will be very crispy and everything will be broken.
Cut when it's slightly hot, first, it won't burn your hands; second, the sugar solution has solidified and stabilized. At this time, the cut shape is stable and the cut surface is beautiful.
Tips:
Use candy paper or candy bags to seal the cut peanut candy!
You can buy candy bags if you have a sealer, or use candy paper if you don't!
