Tips:
1. Bring a pot to a boil over water, add a proper amount of cooking wine. Lower the cut pig's feet, put them in and blanch them, the purpose is to remove the stench of the pig's feet.
Take it out and rinse with water, and then repeat the above steps once.
2. Add proper amount of oil to the wok on the heat, add rock sugar, and stir-fry into sugar color on low heat. Turn the fire into the pig's feet that have gone away. Stir fry until evenly colored.
3. Add the prepared peeled ginger slices and green onion slices. Stir fry for a fragrance. Then cook vinegar and unsalted light soy sauce in turn. Stir fry until the pig's feet are slightly browned
Boil the white wine, and perform three times to remove fishy and fresh.
PS: Prepare a casserole, put a proper amount of cooking wine, star anise, cinnamon, dried chili, pepper, tangerine peel, and salt. Boil. Need to pay attention to here
Bring to a boil in advance and turn to low heat for later use. In addition, the water in the casserole should be soaked in the pig's feet.
4. Pour the fried pork knuckles into a casserole (the green onion and ginger do not need to be removed), turn to high heat and boil for three minutes, then turn to medium heat and continue to cook for 5 minutes, then turn to low
Start simmering for an hour. (If possible, use kitchen paper soaked in water to slightly seal the lid of the casserole). then
The fire will thicken the excess soup.
It's ready to be served on a plate, with a bowl of rice! Suddenly feel that life is nothing but such a sense of satisfaction! It tastes great, try to make it and see!
PS: The salt here is added in two batches, the first time is when the water in the casserole is boiled, and the second time is added in the 50th minute during the stewing. Don't forget!
Taste: salty and slightly sweet, leaving a slight spicy from the taste buds on the tip of the tongue to the throat.
Taste: It is smooth and has a certain degree of Q of the pig's feet. Sisters and brothers who like to eat softer pig's feet can simmer for a while!
So be it! Peanut simmered pig's feet~!
