Today, I would like to introduce to you another side dish that I like-pickled sour cowpea. The traditional way to pickle sour cowpea is to marinate it with salt, pepper, ginger and water, or you can have your own recipe. My secret recipe is to marinate cowpeas with chopped peppers. Stir the cowpeas and chopped peppers together, and then pour the white wine into the bottle and seal it. It only takes 1 minute. This method of pickling cowpeas does not require salt.

Ingredients

Pickled Cowpeas with Chopped Peppers

1. Pick off the old roots at both ends of the tender cowpea, wash with water and dry the moisture, and cut the dried cowpea into small sections with a knife. The length of the cowpea section depends on your preference.

2. The cut cowpea segments are placed in a clean container without oil and water, and 2 tablespoons of chopped pepper

3. Use clean, water-free and oil-free chopsticks to mix the chopped pepper and cowpea evenly

4. Use a clean, water-free and oil-free spoon to put the mixed cowpea and chopped pepper into a clean water- and oil-free bottle

5. Fill it up to eighth full from the bottle mouth

6. Then put the remaining chopped peppers into the mouth of the bottle with a clean, water-free and oil-free spoon, and pour a layer of white wine on top of the chopped peppers to seal

7. Cover the bottle and store in a cool, dark place. Pickled until the cowpea turns from emerald green to yellow, you can eat it
