Pickled Duxian is a famous dish in the south of the Yangtze River. Pickled means bacon, fresh pork ribs, and duxian means stewed with low fire. The taste of this dish is salty and fresh, the meat is crispy and fat, the bamboo shoots are fragrant and crisp, and the flavor is strong.

Pickled Fresh

1. Ribs blanched and rinsed

2. Blanch the bacon

3. Add water to the ribs, add green onion and ginger and cook over high heat. After boiling, add cooking wine and simmer for 1 hour on low heat.

4. Peel and wash bamboo shoots, cut into pieces with a hob
